Goldfish Covered Chicken Fingers

Our local Harris Teeter has an ongoing special of fresh chicken breast from their butcher for $1.99/lb. So of course whenever we shop there I am on that like white on rice.

The hard thing is finding new chicken dishes that are quick and easy. Our apartment doesn't have very good AC, and we aren't allowed to have a grill.

So usually it involves some sort of variation on baked or roasted chicken breast, since we are trying to be healthy. Not that this is really a healthy recipe, because the chicken is coated in orange cheese snacks.


For this recipe you need:
-about 2 cups of cheddar goldfish crackers
-about 1 1/2 cups panko breadcrumbs 
-2 eggs
-2 medium chicken breasts
-salt and pepper to tastes
makes enough for 4

1. assemble all ingredients- whip eggs, add salt and pepper; crush goldfish crackers, mix with panko crumbs; cut chicken breasts into strips
2. dip each chicken strip first into egg, then into breadcrumb mixture. 
3. I wanted my chicken fingers to be a little bit crispy on the outside, so I gave them a quick fry in the frying pan.
4 finish cooking in the oven at 425 degrees for about 15 minutes. These go really well with vegetables, or a summer salad. 

This was such an easy recipe, and it was pretty fun too. It was a cool way to get that cheesy taste into the chicken. I ate mine with spicy mustard, and Dave had his with Sriracha. It would also be great for kids!
