Pumpkin spice is one of my favorite flavors. When it gets to be the end of August, beginning of September, I am counting down in my head to when we can bring out the pumpkin. While I don't think everything should be pumpkin flavored, I think desserts and breakfast foods are fair game.

In celebration of autumn (I know most of you are already in full swing up north, but down here in Virginia the leaves just started to change!!) I made some delicious little pumpkin muffins. And as a plus they were super healthy, and only took two ingredients to make.

I am such a fan of "semi-homemade" things. With limited space in the kitchen of this apartment, I don't have all the proper counter space and appliances that I would like to be able to make great baking concoctions. So for now, semi-homemade it is.

semi-homemade; pumpkin spice; muffins

Prep Time: 15 minutes
Cook Time: 25 minutes
Ingredients (about 16 muffins)
1 box spice cake mix
1 can pumpkin (not pumpkin pie, just pumpkin)

1. Preheat oven to 350 degrees.
2. Mix ingredients in a medium bowl
3. Paper a metal muffin pan, or you can grease the pan. I used papers (as shown above) but next time I would probably just grease the pan.
4. Using a spoon, fill muffin pan. These do not expand at all, so make sure they are the size/fullness you want them to be. Add walnuts to the top if you prefer.
5. Bake for 25 minutes

Literally, they are the easiest things I have ever baked. And with no butter, oil or eggs, they are pretty healthy. I always bring these in to my office for a delicious fall treat! They are too good not to share!
